Ingredients
- 400g (14 oz) boneless chicken breast
- 2 tbsp vegetable oil
- 3 garlic cloves, roughly chopped
- 1 onion, cut into wedges
- 2 capsicums (bell peppers), deseeded and cut into bite-sized pieces
- 3 spring onions (scallions), cut into batons
Marinade:
- 3 tbsp soy sauce
- ½ tsp dark soy sauce
- 1 tbsp Chinese Shaoxing wine
- ½ tsp bicarbonate of soda (baking soda)
- 3 tsp cornflour (cornstarch)
Hoisin Stir-Fry Sauce:
- 3 tbsp hoisin sauce
- 3 tbsp Chinese Shaoxing wine
- 1 tbsp soy sauce
- ½ tsp dark soy sauce
- 2 tsp white vinegar
- 2 tsp sugar
- 1½ tsp ground black pepper
Step 1: Slice and Marinate the Chicken
Begin by slicing the chicken breast thinly across the grain to ensure tenderness.
In a bowl, combine dark soy sauce, Chinese cooking wine (optional), bicarb soda, and corn flour to create a marinade for the chicken.
Mix the marinade well and coat the sliced chicken in it.
Let it sit for a few minutes to allow the flavors to infuse.
Step 2: Prepare the Stir-Fry Sauce
While the chicken is marinating, prepare the stir-fry sauce.
In a separate bowl, mix together hoisin sauce, soy sauce, sugar, vinegar, and a pinch of ground black pepper.
Set this sauce aside for later use.
Step 3: Chop and Preheat
Roughly chop the garlic to prevent it from burning during cooking.
Heat a wok or a wide pan until it is very hot, then add oil to the pan.
This ensures a quick and intense cooking process which is typical for stir-frying.
Step 4: Cook the Aromatics and Chicken
Add the sliced onion to the hot oil and allow it to char slightly before adding the next ingredient.
Spread the marinated chicken in the wok and let it sear without stirring for about 3-4 minutes until it browns.
Once the chicken is browned, stir it to combine and then add the chopped garlic, giving it a quick toss to meld the flavors together.
Step 5: Add Vegetables and Sauce
Add the sliced capsicum (bell pepper) to the wok and cook until it becomes slightly tender.
Pour the prepared stir-fry sauce around the edges of the wok to allow it to bubble and thicken as it heats up.
Toss everything together to coat the chicken and vegetables thoroughly in the sauce.
Step 6: Finish and Serve
Finally, add chopped spring onions into the mix and stir well to spread their fresh flavor throughout the dish.
Once everything is evenly coated and fragrant, serve your delicious stir-fried chicken hot and enjoy!
