Ingredients
- 4 boneless chicken breasts
- 1 can diced tomatoes (28 ounces)
- 1 cup chicken stock
- 1 diced onion
- 1/2 cup white cooking wine (or substitute with chicken stock)
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon sugar
Step 1: Season and Sauté the Chicken
Start by seasoning both sides of the chicken breasts with salt and pepper.
Heat a large sauté pan over medium-high heat and add the olive oil.
Once the oil is hot, sauté the chicken breasts until they are golden brown on both sides.
Remove the chicken breasts from the pan and place them on a plate.
Step 2: Prepare the Sauce
With the same pan still on medium-high heat, add white cooking wine to deglaze it, scraping up any browned bits from the bottom of the pan.
Next, add the chopped onions, chicken broth, diced tomatoes, garlic powder, and a pinch of sugar.
Stir everything together and let it simmer for about 10 minutes to blend the flavors.
Step 3: Cook the Chicken with the Sauce
Place the chicken breasts back into the pan, making sure to spoon some of the tomato mixture on top of the breasts.
Reduce the heat and simmer for about 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
