Ingredients
For the chicken:
- 2 tbsp olive oil (I use Colavita extra virgin)
- 4 boneless, skinless chicken breasts (6 oz each)
For the seasoning rub:
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 2 tsp paprika (smoked for extra depth)
- 1 tsp garlic powder
- 1 tsp dried oregano
For the stuffing:
- 2 minced garlic cloves
- 5 oz frozen chopped spinach (thawed and well-drained, about 1/2 cup squeezed dry)
- 1/2 tsp dried dill
- 1/4 cup ricotta cheese
- 1/2 cup crumbled feta cheese (Sargent is a good option)
- 2 tbsp chopped green onions
Step 1: Preheat and Prepare the Chicken
Preheat your oven to 400°F.
Meanwhile, pat the chicken dry with a paper towel.
Make a horizontal slit in the thickest part of each chicken breast to create a pocket, taking care not to cut all the way through.
Step 2: Season the Chicken
In a small bowl, combine the following spices: paprika, oregano, garlic powder, onion powder, salt, and pepper.
Season both sides of the chicken breasts with this mixture.
Use your hands to rub the seasoning in well, ensuring even coverage.
Step 3: Make the Stuffing
In another small bowl, mix together the spinach, feta cheese, ricotta cheese, scallions, garlic, and dill.
Stuff this mixture evenly into the pockets of the chicken breasts.
Use a couple of toothpicks to secure each pocket, ensuring the filling stays inside during cooking.
Step 4: Sear the Chicken
Heat a large oven-safe skillet or cast iron skillet over medium-high heat.
Add a little olive oil, then place the stuffed chicken breasts in the skillet.
Sear each side until they are lightly golden brown, roughly 3-4 minutes per side.
Step 5: Bake and Broil the Chicken
Transfer the skillet to the preheated oven, leaving it uncovered.
Bake the chicken until it is cooked through, about 15-18 minutes.
If you desire a browner skin, broil the chicken for an additional 1-2 minutes at the end.
Step 6: Serve and Enjoy
Once fully cooked, carefully remove the skillet from the oven.
Let the chicken rest for a few minutes before serving.
