Ingredients
- 2 pounds chicken (breasts, thighs, or drumsticks)
- 4 medium potatoes (peeled and cubed)
- 1 large onion (cut into wedges)
- 2 cups cherry tomatoes (or quartered regular tomatoes)
- 6 minced garlic cloves
- 1 red bell pepper (roughly chopped)
- 1 cup kalamata olives
- 4 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 3 chopped basil leaves
Step 1: Preheat the Oven
Start by preheating your oven to 375°F (190°C) to get it ready for roasting the chicken and vegetables.
Step 2: Prepare the Vegetables and Chicken
In a large bowl, combine the potatoes, onion, tomatoes, peppers, and olives.
Place the chicken in a separate bowl.
Take half of the garlic, oil, vinegar, salt, pepper, and paprika, and add it to the vegetable mixture.
Use the remaining halves of these ingredients and add them to the chicken.
Toss both mixtures well to ensure they are evenly coated with the spices and oil.
Step 3: Arrange in Baking Dish
Transfer the seasoned vegetable mixture into a large 9×13-inch baking dish, spreading them out evenly.
Arrange the seasoned chicken pieces over the top of the vegetables, ensuring an even distribution for consistent roasting.
Step 4: Roast the Chicken and Vegetables
Place the baking dish in the preheated oven and roast for about 1 hour.
Check for doneness by ensuring the chicken is cooked through (internal temperature should reach at least 165°F) and the potatoes are fork-tender.
Step 5: Add Fresh Basil and Serve
Once the chicken and vegetables are cooked, remove the baking dish from the oven.
Sprinkle fresh basil over the top of the chicken and vegetables to add a burst of freshness.
Serve the dish hot, drizzling some of the flavorful pan juices over the chicken just before serving to enhance the flavor.
