Ingredients
- 4 tablespoons olive oil, divided
- 450 grams chicken breasts
- 1 diced onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 minced garlic cloves
- 1 1/2 cups basmati rice
- 1 1/2 teaspoons turmeric powder
- 1 teaspoon paprika
- 1 cup frozen peas
- 1 1/2 cups chicken stock
- 1 cup hot water
Step 1: Season and Fry the Chicken
Begin by sprinkling some salt and black pepper over the chicken breasts to season both sides.
In a large skillet, heat some oil over medium-high heat.
Add the seasoned chicken breasts and fry until they are lightly browned on both sides.
Once done, remove the chicken from the skillet and set it aside.
Step 2: Sauté Onions and Garlic
In the same skillet, heat the remaining oil.
Add the onions and sauté for 1-2 minutes until they are softened.
Then, add the garlic and sauté for another 30 seconds until fragrant.
Remove the skillet from heat.
Step 3: Preheat Oven and Prepare the Baking Pan
Preheat your oven to 180°C (357°F).
In a baking pan, combine the sautéd onions and garlic with rice, turmeric, paprika, and a bit more salt.
Mix everything well to ensure the rice is evenly coated with the spices.
Step 4: Add Peas and Chicken
Stir in the peas into the rice mixture in the baking pan.
Then, place the previously cooked chicken breasts on top of the rice mixture.
This will ensure that the flavors of the chicken infuse into the rice as it cooks.
Step 5: Add Liquids and Bake
Pour in chicken broth and boiling water into the baking pan.
Cover the pan with a lid or aluminum foil.
Place the baking pan in the preheated oven and bake for 30-40 minutes, or until the rice is fully cooked and has absorbed the liquid.
Step 6: Serve
Once the baking time is complete and the rice is tender, remove the baking pan from the oven.
