Today, I’m excited to share my special recipe for Christmas cookies with butter.
These cookies are soft, buttery, and oh-so-delicious.

Ingredients
- 1 cup salted butter
- 3/4 cup icing sugar (confectioner’s sugar or powdered sugar)
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- Cherries (for topping)
Step 1: Cream Butter and Sugar
In a mixing bowl, combine 1 cup of salted butter and 3/4 cup of icing sugar (confectioner’s sugar or powdered sugar).
Use a mixer to cream the butter and sugar together until well combined and fluffy.
Step 2: Add Dry Ingredients and Flavor
Sift in 2 cups of all-purpose flour into the creamed butter and sugar mixture.
Add 1 teaspoon of vanilla extract as well.
Mix again until the dough comes together nicely and is fully incorporated.
Step 3: Shape and Chill the Dough
Divide the dough into two equal discs and flatten them slightly for easier rolling later.
Wrap each disc in plastic wrap and refrigerate for about 1 hour until firm.
Step 4: Roll and Cut the Dough
After chilling, sprinkle some flour on a clean surface to prevent sticking and roll out the dough to your desired thickness.
Use cookie cutters to cut out shapes from the rolled dough, maximizing the dough by cutting shapes as close to each other as possible.
Step 5: Prepare and Add Cherries
Prepare cherries by cutting them in half.
Optionally, you can press your finger into the center of each cookie to create a small indentation where the cherry will sit.
Place a cherry half on top of each cookie.
Step 6: Bake the Cookies
Preheat the oven to 300°F (150°C).
Bake the cookies in the preheated oven for 20 minutes, ensuring they do not brown on the edges.
Once baked, remove the cookies from the oven and let them cool on a silicone liner, parchment paper, or directly on the baking sheet.
