Today, I’m sharing my recipe for Christmas cookies with peppermint chips.
These cookies are soft, sweet, and bursting with that classic peppermint flavor.
They’re perfect for sharing or just enjoying yourself by the fire.

Ingredients
- 1 1/4 cups all-purpose flour, spooned and leveled (170g)
- 1/4 cup cocoa powder (20g)
- 1/2 teaspoon salt (3g)
- 1/2 teaspoon baking soda (3g)
- 1/2 teaspoon baking powder (2g)
- 1 stick salted butter, softened (113g)
- 1/2 cup white sugar (100g)
- 1/2 cup packed brown sugar (95g)
- 1 teaspoon vanilla essence (5ml)
- 1 large egg, room temperature
- 1/2 cup peppermint chips (95g), plus extra for garnish
- 1 crushed candy cane (optional)
Step 1: Preheat and Prepare Baking Sheets
Preheat your oven to 375°F (190°C).
Line two cookie sheets with parchment paper to ensure the cookies don’t stick and are easy to remove after baking.
Step 2: Mix Dry Ingredients
In a medium bowl, combine the flour, cocoa powder, salt, baking soda, and baking powder.
Mix these dry ingredients together until well combined, then set the bowl aside for later use.
Step 3: Cream Butter and Sugars
In the bowl of a stand mixer, or a large bowl if using a hand mixer, cream together the butter and both sugars.
Beat for 3 minutes until the mixture becomes light and fluffy.
This creaming process is crucial for a good texture in the cookies.
Step 4: Add Egg and Vanilla
Next, add the egg and vanilla extract to the bowl.
Beat for another 2 minutes until the mixture becomes even fluffier.
Be sure to scrape down the sides of the bowl as needed to ensure all the ingredients are fully incorporated.
Step 5: Combine Dry and Wet Ingredients
Gradually add the flour mixture to the creamed butter mixture, beating on low speed until everything is just incorporated.
This should take about 1 minute.
The resulting dough will be thick.
Stir in the peppermint chips using a spatula, making sure the chips are evenly dispersed throughout the dough.
Step 6: Shape and Bake the Cookies
Scoop the dough into 2” (5 cm) balls and place them 3” (7 cm) apart on the prepared cookie sheets.
Press a few more peppermint chips into the tops of each cookie if desired for added texture and flavor.
Bake the cookies on the center rack of the oven for 10-12 minutes, or until the edges are dark brown and the centers look set.
Allow the cookies to cool on the pan for at least 10 minutes before serving.
Step 7: Finishing Touches
If you wish, sprinkle crushed candy cane on the warm cookies for an extra pop of color and festive flair.
