Preparation Time | 15-20 minutes |
Cooking Time | 11-12 minutes |
Total Time | 26-32 minutes |
Level of Difficulty | Easy |
Ingredients
- 115 grams (1/2 cup or 1 stick) unsalted butter, softened
- 90 grams (1/2 cup) packed brown sugar
- 50 grams (1/4 cup) granulated sugar or caster sugar
- 2 teaspoons vanilla essence
- 1 large egg, at room temperature
- 210 grams (1 1/2 cups) all-purpose flour or plain flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 75 grams (1/2 cup) white chocolate chips
- 75 grams (1/2 cup) milk or dark chocolate chips
- 200 grams (1 cup) smarties, plus extra for topping
- Sea salt for sprinkling
Step 1: Preheat Oven and Prepare Baking Trays
Preheat your oven to 180°C (350°F) for a standard oven or 160°C (320°F) for a fan-forced oven.
Line two baking trays or cookie sheets with baking or parchment paper.
Step 2: Cream Butter and Sugars
In a large mixing bowl, add the butter and sugars.
Beat with an electric mixer on medium speed until the mixture is smooth and creamy.
This usually takes a couple of minutes.
Step 3: Incorporate Wet Ingredients
Add the vanilla extract and egg to the bowl.
Beat until combined, ensuring to scrape down the sides of the bowl to fully incorporate all ingredients.
Step 4: Form the Cookie Dough
Add the flour, baking soda, and salt to the wet mixture.
Beat again just until a soft cookie dough forms.
Add in the chocolate chips and Smarties.
Mix on a low speed just until the chocolate and Smarties are evenly distributed throughout the dough.
Alternatively, you can use a wooden spoon or spatula.
Be careful not to over-mix.
Step 5: Shape and Bake the Cookies
Scoop out approximately 1.5 tablespoons of the cookie dough per cookie, forming it into balls.
Place the dough balls on the prepared baking trays, leaving enough room for the cookies to spread as they bake.
Bake in the preheated oven for 11-12 minutes, or until the edges are golden brown.
Step 6: Cool and Add Finishing Touches
Once out of the oven, add a few extra Smarties on top of the warm cookies for added color and texture.
Allow the cookies to cool on the baking trays for 5 minutes before transferring them to a wire rack to cool completely.
For a final touch, sprinkle the cookies with a pinch of sea salt.
