Ingredients
- 1 1/2 cups gluten-free baking flour (or all-purpose gluten-free flour)
- 1 cup granulated erythritol (or your choice of granulated sweetener)
- 1/2 teaspoon baking powder
- 1 prepared bob’s red mill egg replacer
- 1 tablespoon pure madagascar bourbon vanilla extract
- 6 tablespoons cubed vegan, soy-free butter
Step 1: Preheat the Oven and Prepare the Mixing Bowl
Start by preheating your oven to 350°F (175°C).
While the oven is heating, get a large mixing bowl ready for combining the ingredients.
Step 2: Combine Dry Ingredients
In the large mixing bowl, combine the flour, sweetener, and baking powder.
Use a whisk to mix these dry ingredients together until they are well combined and evenly distributed.
Step 3: Add Wet Ingredients and Knead the Dough
Next, add the prepared egg replacement, vanilla extract, and cubed butter into the bowl with the dry ingredients.
Use your hands to mix and knead the dough until the butter is fully combined with the flour mixture.
The dough should be uniform in texture and consistency.
Step 4: Form and Place Dough Balls
Using a teaspoon, scoop out small amounts of dough and roll them into 1 teaspoon-sized balls.
Place these balls evenly spaced on a baking sheet lined with a Silpat or parchment paper.
Aim to make about 45 cookies, spaced out to prevent them from touching each other while baking.
Step 5: Bake the Cookies
Place the baking sheet(s) in the preheated oven and bake for about 15 minutes, or until the edges of the cookies are slightly golden brown.
Keep an eye on them to ensure they do not overbake.
Step 6: Cool and Store
Once baked, remove the cookies from the oven and let them cool completely on a wire rack.
After they have cooled, store the cookies in an airtight container.
They can be kept fresh for at least 2 weeks.
