Preparation Time 10-15 minutes
Cooking Time 15-18 minutes
Total Time 25-35 minutes
Level of Difficulty Easy

Ingredients

  • 3 cups plain flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 6 tablespoons room temperature butter
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup eggnog
  • 3 cups powdered sugar
  • 3 tablespoons eggnog
  • Ground cinnamon for sprinkling

Step 1: Preheat Oven and Prepare Muffin Pans

Heat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Line your muffin pans with cupcake liners or lightly coat them with cooking spray to prevent sticking.

Set them aside for later use.

Step 2: Combine Dry Ingredients

In a small bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.

This ensures that the spices and leavening agents are evenly distributed throughout the flour.

Step 3: Beat Sugars and Butter

In the bowl of a stand mixer, or a large bowl using a hand mixer, beat together the granulated sugar, brown sugar, and butter until the mixture is light and fluffy.

This process can take about 3-5 minutes.

Step 4: Incorporate Wet Ingredients

One at a time, add the eggs to the sugar and butter mixture, beating well after each addition.

Next, add the vegetable oil and beat until fully incorporated.

Finally, add the vanilla extract and mix until combined.

Step 5: Combine Dry and Wet Ingredients

Gradually add the dry ingredients to the wet mixture in the mixer, alternating with eggnog.

Blend until everything is well mixed and the batter is smooth.

Be careful not to overmix.

Step 6: Pour Batter and Bake

Pour the batter into the prepared muffin pans, filling each cup about two-thirds full.

Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove the muffins from the oven and place them on a wire rack to cool completely.
