Easy Christmas Pudding Cookies Recipe

Ingredients

  • 8 oz / 225 g butter
  • 5 oz / 140 g caster sugar
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 9 oz / 250 g plain flour
  • 1 oz / 25 g cocoa powder
  • Pinch of salt
  • 12 oz / 350 g chocolate chips
  • Red icing
  • Green icing
  • Edible glue
  • Corn flour for dusting

Step 1: Prepare the Cookie Dough

Preheat the oven to 190°C (375°F) or gas mark 5.

In a bowl, combine 8 oz (225 g) of butter and 5 oz (140 g) of caster sugar.

Mix together using an electric whisk or by hand until creamy.

Add 1 egg yolk and 2 teaspoons of vanilla extract, and mix well.

Sift in 9 oz (250 g) of plain flour and 1 oz (25 g) of cocoa powder.

Mix until completely combined.

Add a pinch of salt and stir.

Finally, fold in 12 oz (350 g) of chocolate chips until they are evenly distributed throughout the dough.

Step 2: Shape the Cookies

Weigh out 80 g of the cookie mixture for each cookie.

Use a 3-inch cookie cutter to shape the cookies.

Press the mixture firmly into the cutter and then remove it to maintain a perfect circle.

Place the shaped cookies on a baking tray lined with parchment paper.

Step 3: Bake the Cookies

Bake the cookies in the preheated oven for 12 to 15 minutes, or until the edges are firm.

Once baked, transfer the cookies to a cooling rack and let them cool completely until they are cold to the touch.

Step 4: Prepare and Apply Icing

Prepare red and green icing for decoration.

Pipe white icing around the edge of each cookie to create a dripping effect.

Fill in the center of the cookie and smooth it out with a cocktail stick.

Allow the icing to set slightly before moving on to the next step.

Step 5: Decorate the Cookies

Roll out the green icing and cut out holly shapes using holly cutters or a round cutter for decoration.

Roll small pieces of red icing into balls to create berries.

Attach the berries to the center of the holly shapes using edible glue.

Once the white icing has set completely, glue the holly pieces onto the cookies.

Optionally, use a size 2 piping tip to write names on the cookies if you are making them as gifts.
