Level of Difficulty Easy

Ingredients

  • 3 cups crushed vanilla wafer biscuits
  • 3/4 cup powdered sugar
  • 1/4 cup cocoa powder (unsweetened)
  • 1 1/2 cups finely chopped pecans
  • 1 teaspoon vanilla essence
  • 3 tablespoons corn syrup (light)
  • 1/2 cup spiced rum

Step 1: Gather and Prepare Ingredients

First, collect all your ingredients: 3 cups of crushed vanilla wafer cookies, ¾ cup of confectioners’ sugar, ¼ cup of unsweetened cocoa powder, 1 ½ cups of finely chopped pecans, 1 teaspoon of pure vanilla extract, 3 tablespoons of light corn syrup, and ½ cup of spiced rum.

Make sure everything is pre-measured and ready to go.

Step 2: Mix Dry Ingredients

In a large bowl, combine the crushed vanilla wafers, confectioners’ sugar, cocoa powder, and chopped pecans.

Stir thoroughly until the mixture is evenly mixed, ensuring that the cocoa powder and sugar are fully distributed among the wafer crumbs and pecans.

Step 3: Add Wet Ingredients

Drizzle the vanilla extract, corn syrup, and spiced rum into the bowl with the dry mixture.

Stir well to fully incorporate all ingredients.

Make sure there are no dry bits left in the mixture; it should appear moist and even.

Step 4: Test and Adjust Mixture

To ensure you have the right consistency, take a small amount of the mixture and squeeze it into a ball shape in your hands.

If it holds together, the mixture is ready to be shaped into balls.

If it falls apart or feels too dry, add a small amount of crushed wafers or more rum as needed to achieve the desired texture.

Step 5: Shape the Rum Balls

Use a cookie scoop to portion out the mixture.

Roll each portion into 1-inch balls using the palms of your hands.

This will help ensure that all the rum balls are uniformly sized.

Step 6: Coat the Rum Balls

Select a coating of your choice, such as additional confectioners’ sugar, cocoa powder, sprinkles, or crushed nuts.

Roll each formed ball in the chosen coating, ensuring they are fully covered.

This will help add an extra layer of flavor and texture to the rum balls.

Step 7: Store and Refrigerate

Place the coated rum balls in an airtight container and refrigerate them for at least one hour before serving.

This allows the flavors to meld together and the balls to firm up.

Serve chilled and enjoy!
