Ingredients

  • 1 cup cottage cheese
  • ⅓ cup marinara sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon italian seasoning
  • 2 tablespoons bell pepper diced, divided
  • 1 tablespoon black olives slices, divided
  • ½ cup mozzarella cheese divided
  • 8 pepperoni slices

Step 1: Prepare the Ramekins

Start by preparing two ramekins.

Ensure they are clean and ready for the mixture.

Step 2: Mix the Ingredients

In a large bowl, combine the cottage cheese, marinara sauce, pieces of olives, red bell pepper, and your choice of spices.

If you prefer a smoother texture and want to avoid the curds in the cottage cheese, blend the cottage cheese and marinara sauce together in a blender or food processor before adding the other ingredients.

Stir everything until well combined.

Step 3: Add Cheese and Portion the Mixture

Stir in half of the grated cheese into the mixture.

Once combined, divide the mixture evenly between the two ramekins.

Top each ramekin with 1 tablespoon of marinara sauce, the remaining mozzarella cheese, and a few slices of pepperoni.

Step 4: Cook the Mixture

For cooking options, you can air fry the ramekins at 400°F (200°C) for 10 minutes, or until the cheese is melted and bubbling.

Alternatively, microwave them for 1-2 minutes until the cheese is melted.

You can also preheat your oven to 400°F (200°C) and bake for 15-16 minutes or until the cheese is melted and lightly golden.

Step 5: Serve and Enjoy

Once cooked, remove the ramekins from the heat source (they will be hot!).

Serve your dish with low-carb chips or almond flour crackers for a delicious low-carb pizza dinner.

Enjoy your meal!
