Ingredients

  • 1/2 tsp Italian seasoning
  • 2 tbsp diced bell pepper (any color)
  • 1 cup cottage cheese
  • 1 tbsp sliced black olives (canned preferred)
  • 1/2 tsp garlic powder
  • 8 slices pepperoni (I like using Jennie-O turkey pepperoni)
  • 1/3 cup marinara sauce
  • 1/2 cup mozzarella cheese (shredded low-moisture part-skim)

Step 1: Prepare the Ramekins

Start by preparing two ramekins.

Ensure they are clean and ready for the mixture.

 

Step 2: Mix the Ingredients

In a large bowl, combine the cottage cheese, marinara sauce, pieces of olives, red bell pepper, and your choice of spices.

If you prefer a smoother texture and want to avoid the curds in the cottage cheese, blend the cottage cheese and marinara sauce together in a blender or food processor before adding the other ingredients.

Stir everything until well combined.

 

Step 3: Add Cheese and Portion the Mixture

Stir in half of the grated cheese into the mixture.

Once combined, divide the mixture evenly between the two ramekins.

Top each ramekin with 1 tablespoon of marinara sauce, the remaining mozzarella cheese, and a few slices of pepperoni.

You can also preheat your oven to 400°F (200°C) and bake for 15-16 minutes or until the cheese is melted and lightly golden.
