- 1 1/2 cups cottage cheese
- 1/2 cup milk
- 1 1/2 teaspoons italian seasoning
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon black pepper
- Pinch of salt
- 1 1/2 tablespoons butter
- 1 tablespoon minced garlic
- 1 teaspoon corn starch
- 6 oz pasta (protein plus panet)
- Optional: cooked protein (e.g., rotisserie chicken)
- Optional: crushed red pepper
Step 1: Prepare the Cottage Cheese Mixture
Start by adding 1 and 1/2 cups of cottage cheese, half a cup of milk, 1 and 1/2 teaspoons of Italian seasoning, half a cup of grated Parmesan cheese, half a teaspoon of black pepper, and a pinch of salt into a blender or food processor.
Blend or process the mixture until smooth.
If the sauce is too thick, add a little more milk or some higher protein bone broth to thin it out.
For a creamier sauce, consider using cottage cheese with higher fat content and a higher protein milk.
Step 2: Melt the Butter and Cook the Garlic
In a stovetop pan, turn the burner on low heat and add 1 and 1/2 tablespoons of butter.
Allow the butter to melt completely.
Once melted, add 1 tablespoon of minced garlic and let it cook for a few minutes until fragrant, being careful not to burn it.
