- 1 egg
- 1 tsp vanilla extract
- 1 ripe banana (use half for the batter, reserve the other half for topping)
- 3 tbsp cottage cheese
- 3 tbsp oats (gluten free)
- 2 tbsp flour (1:1 gluten free, oat or regular flour)
- 3 tbsp vanilla protein powder
- 1/2 tsp baking powder
Step 1: Gather and Prepare Ingredients
Start by gathering all the ingredients you will need: 1 egg, 1 tsp vanilla extract, 1 ripe banana (use half for the batter and reserve the other half for topping), 3 Tbsp cottage cheese, 3 Tbsp oats (gluten-free if desired), 2 Tbsp flour (1:1 gluten-free, oat, or regular flour), 3 Tbsp vanilla protein powder, and 1/2 tsp baking powder.
Step 2: Mix the Wet Ingredients
In a bowl, whisk together 1 egg and 1 tsp of vanilla extract until well combined.
Next, mash ½ of the banana and mix it with 3 Tbsp of cottage cheese in the same bowl until smooth.
Step 3: Combine Dry Ingredients
Stir in 3 Tbsp of oats, 2 Tbsp of flour, 3 Tbsp of vanilla protein powder, and ½ tsp of baking powder into the wet mixture.
Mix until all ingredients are well incorporated and a batter forms.
Step 4: Cook the Pancakes
Heat a pan over medium heat and add butter to coat the surface.
Once the pan is hot, pour ¼ cup of the batter onto the pan.
Cook the pancake until it is golden brown, then carefully flip it and cook the other side until golden as well.
Repeat this process with the remaining batter.
Step 5: Serve and Enjoy
Once all pancakes are cooked, top them with slices of the reserved banana and drizzle with maple syrup for added sweetness.
