Ingredients
- 200g pasta sauce (keep it cleaner tomato garlic & basil pasta sauce)
- 80ml franks redhot buffalo sauce
- 220g low fat cottage cheese
- 1/2 tbsp ranch seasoning (deliciou)
- 600g thinly cut chicken breast (raw weight)
- 1 tsp olive oil
- 1 tbsp smoked paprika
- 1 tsp cajun seasoning
- 1 tsp garlic powder
- Salt
- Pepper
- 320g pasta (dry weight – vetta smart protein penne)
- Spring onion (optional topping)
- Buffalo sauce (optional topping)
Step 1: Prepare the Sauce
In a blender cup, combine 200g of pasta sauce, 80ml of Frank’s Redhot Buffalo Sauce, 220g of low-fat cottage cheese, and 1/2 tablespoon of ranch seasoning.
Blend the mixture until it becomes creamy and smooth, ensuring all ingredients are well incorporated.
Step 2: Cook the Chicken
In a pan, add 600g of thinly cut chicken breast along with 1 teaspoon of olive oil.
Season the chicken with 1 tablespoon of smoked paprika, 1 teaspoon of Cajun seasoning, 1 teaspoon of garlic powder, and a pinch of salt and pepper.
Cook the chicken on high heat until it is fully cooked through, then set it aside.
Step 3: Cook the Pasta
While the chicken is cooking, bring a pot of water to a boil and cook 320g of dry pasta according to the package instructions.
Once the pasta is cooked, drain it and set it aside.
Step 4: Combine Sauce and Chicken
Lower the heat on the pan with the cooked chicken and add the blended sauce to the pan.
Stir to combine and let it heat through for a couple of minutes.
Step 5: Mix Pasta and Sauce
Add the drained pasta to the sauce in the pan, pouring in a bit of reserved pasta water to achieve a creamy consistency.
Mix everything together until well combined, ensuring the pasta is evenly coated with the sauce.
Step 6: Meal Prep and Serve
Evenly distribute the pasta and chicken mixture across four meal prep containers.
Allow to cool slightly before sealing.
