Preparation Time | 10-15 minutes |
Cooking Time | 15-20 minutes |
Total Time | 25-35 minutes |
Level of Difficulty | Easy |
Ingredients
- 6 hard boiled eggs
- ½ c lowfat cottage cheese
- 1 tablespoon dijon mustard
- ¼ teaspoon each sea salt and ground black pepper
- Smoked paprika for garnish
Step 1: Boil the Eggs
Place the eggs in a high-sided saucepan and fill it with water until it covers the eggs by about an inch.
Add 1 teaspoon of baking soda to the water.
Bring the water to a rolling boil and let it boil for one minute.
After one minute, remove the saucepan from heat, cover it, and let the eggs sit for 12 minutes.
Step 2: Cool the Eggs
Once the eggs have sat for 12 minutes, immediately transfer them to a bowl filled with ice water.
Make sure the eggs are fully submerged to cool them quickly.
Allow the eggs to cool completely in the ice water, then keep them chilled until you are ready to use them.
Step 3: Prepare the Filling
Once the eggs are cooled, carefully remove the egg shells.
Slice each egg in half and gently remove the yolks into a bowl.
Add cottage cheese, Dijon mustard, and salt and pepper to taste into the bowl with the yolks.
Mash the mixture until it is smooth and well combined.
Step 4: Assemble the Deviled Eggs
Scoop the filling mixture back into the egg white halves.
Sprinkle a little smoked paprika on top of each filled egg for an added touch of flavor and presentation.
Step 5: Serve or Store
Serve the deviled eggs immediately, or if you prefer, cover them and store them in the refrigerator.
They can be enjoyed within 24 hours for the best taste.
