Ingredients
- 6 large whole eggs or 12 large egg whites
- 1 cup cottage cheese
- 3/4 cup grated cheese (like parmesan or romano)
- 1/2 teaspoon black pepper
- Salt (to taste)
- Green bell pepper (chopped)
- Onion (chopped)
- Garlic (chopped)
- Spinach
- Mushrooms (chopped)
- 2 oz cooked chopped ham, sausage, or bacon
- 1 tablespoon olive oil
- Non-stick cooking spray
Step 1: Preheat the Oven and Prepare Ingredients
Preheat the oven to 350°F (175°C).
While the oven is warming up, gather all your ingredients.
In a blender or food processor, add either 6 large whole eggs or 12 large egg whites, depending on your dietary preference.
Then, add 1 cup of cottage cheese, 3/4 cup of grated cheese (like Parmesan or Romano), 1/2 teaspoon of black pepper, and a little salt.
Step 2: Blend the Base Mixture
Blend or process the mixture until it becomes smooth and creamy.
This will ensure that the cottage cheese and eggs are well combined for a uniform texture.
Step 3: Prepare the Vegetables
Choose your vegetables, such as green bell pepper, onion, garlic, spinach, and mushrooms, and chop them into bite-sized pieces.
If you prefer your vegetables cooked, heat 1 tablespoon of olive oil in a 10-inch skillet over medium heat.
Step 4: Cook the Vegetables (Optional)
Add the chopped vegetables to the skillet and cook for a couple of minutes, or until they are tender.
Once cooked, turn off the burner.
If you prefer to keep the vegetables raw, simply mix them into the blended egg and cottage cheese mixture.
Step 5: Combine and Bake
Pour the blended egg and cottage cheese mixture into the skillet with the cooked vegetables.
Top the mixture with 2 ounces of cooked, chopped ham, sausage, or bacon.
If you opted for uncooked vegetables, mix them into the blended mixture, then pour it into an oven-safe pan or dish.
Step 6: Bake and Cool
Place the pan or dish in the preheated oven and bake.
Bake for 40 to 45 minutes if using a thicker dish, or 20 minutes if using a thinner dish.
Check for doneness; the frittata is finished when it is set and has a golden appearance.
Allow it to cool slightly before serving.
