Hey there, sweet lovers!
Who’s in the mood for a delicious treat? I’ve got something special for you today!
I’m sharing my favorite recipe for cottage cheese kalakand.
This delightful Indian sweet is rich, creamy, and bursting with flavor.
It’s easier to make than you might think and perfect for any occasion.
Let’s dive into this tasty recipe together!
Preparation Time | 10-15 minutes |
Cooking Time | 30-35 minutes |
Total Time | 40-50 minutes |
Level of Difficulty | Medium |
Ingredients
- 500 grams cottage cheese (2%-4% fat)
- 1 can sweetened condensed milk (300 ml)
- 3 tablespoons powdered milk
- 2 tablespoons chopped almonds
- 2 tablespoons chopped pistachios
- 1/2 teaspoon ground cardamom
- 1/8 teaspoon saffron threads
- 1 tablespoon ghee
- Optional: edible rose petals
Step 1: Prepare Equipment and Ingredients
Begin by greasing a small tray or steel plate with a little ghee and set it aside.
For easier removal later, you can optionally line the tray with parchment paper.
Using a fork or masher, break up any large pieces of cottage cheese to ensure an even consistency.
Step 2: Combine Ingredients in Saucepan
In a thick-bottomed saucepan, combine the broken-up cottage cheese, milk powder, and sweetened condensed milk.
Stir these ingredients together until well mixed.
Step 3: Heat and Stir the Mixture
Place the saucepan on medium heat and allow the mixture to heat up.
Once hot, stir the mixture frequently to prevent sticking and burning at the bottom of the pan.
Continue stirring until the mixture starts to thicken, which should take about 20-25 minutes.
Step 4: Integrate Ghee and Spices
Add ghee to the thickening mixture in the saucepan and keep stirring until the mixture thickens further.
Mix in the cardamom powder and continue stirring until the mixture starts to pull away from the sides of the pan.
Finally, add saffron and mix well.
Note that the kalakand mixture will not form into a ball like traditional barfi.
Step 5: Set and Garnish the Kalakand
Once the mixture is thick and pulling away from the pan, transfer it to the greased tray, ensuring it is at least 1 inch thick.
Smooth the top with a spatula.
Garnish the top with chopped nuts and rose petals for an extra touch of elegance.
