- 1 1/2 cups cottage cheese
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
- Pinch of salt
- 1/3 cup chocolate chips
- Optional: all natural green food coloring
Step 1: Gather and Prepare the Ingredients
Start by gathering the necessary ingredients: 1 ½ cups of cottage cheese, ⅓ cup of maple syrup (or honey), 1 teaspoon of vanilla extract, ¼ teaspoon of peppermint extract, a pinch of salt (optional), and ⅓ cup of chocolate chips.
If you want a minty green color, also prepare some natural green food coloring.
Step 2: Blend the Ingredients
In a blender, immersion blender, or food processor, add the cottage cheese.
Pour in the maple syrup, vanilla extract, peppermint extract, and a pinch of salt (if using).
If desired, add a few drops of natural green food coloring.
Blend on high for about 1 minute, or until completely smooth.
Stop halfway to scrape down the sides with a spatula, then blend for an additional 30 seconds.
Taste the mixture to check the sweetness and mint flavor.
Adjust by adding more maple syrup if desired.
Step 3: Incorporate Chocolate Chips
Pour the blended mixture into a shallow bowl or dish, spreading it out evenly with a spatula.
