Let’s get started and make your kitchen smell amazing!

Suggestions for Ingredient Substitution
When making the bread, you have several options for ingredient substitutions:
If you’re out of rolled oats, try using quick oats or quinoa flakes for a gluten-free alternative.
Greek yogurt or ricotta cheese can stand in for cottage cheese if needed.
Chia seeds work well as a substitute for flax seeds.
You can replace eggs with 60–70 grams applesauce per egg.
Pumpkin seeds can be swapped with chopped nuts like almonds or walnuts, while sunflower seeds can be replaced with sesame seeds.
Feel free to omit or reduce salt according to your taste preferences.
Lastly, if nigella seeds aren’t available, try using sesame or poppy seeds for a different flavor profile.

Ingredients
- 200 grams rolled oats
- 300 grams low-fat cottage cheese
- 2 eggs
- 2 tablespoons flaxseeds
- 25 grams pumpkin seeds
- 25 grams sunflower seeds
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon nigella seeds
Step 1: Mix Ingredients
Place all ingredients (200g rolled oats, 300g low fat cottage cheese, 2 eggs, 2 tablespoons flax seeds, 25g pumpkin seeds, 25g sunflower seeds, 2 teaspoons baking powder, 1/2 teaspoon salt, and 1/2 teaspoon nigella seeds) in a large bowl.
Use a spatula to mix everything together until well combined.
Make sure there are no dry spots left in the mixture.
Step 2: Preheat the Oven
Preheat your oven to 180°C (350°F).
This ensures that the oven reaches the right temperature while you are preparing the dough, which is crucial for proper baking.
Step 3: Shape the Dough
Transfer the mixed dough into a small loaf tin.
If you prefer, you can shape the dough into a loaf and place it on a baking sheet lined with parchment paper.
This will help prevent sticking and make it easier to remove the loaf after baking.
Step 4: Bake the Loaf
Bake the loaf in the preheated oven at 180°C (350°F) for 60 minutes.
The baking process allows the loaf to cook through and develop a nice crust.
Step 5: Cool and Slice
Once the baking time is up, remove the loaf from the oven.
Let it cool completely before slicing.
This will help the loaf firm up and make it easier to cut into even slices.
Enjoy your homemade seed bread!
