Easy Cottage Cheese Popsicles

Ingredients

  • 1 ½ cups whole milk cottage cheese
  • ½ cup unflavored greek yogurt
  • ¼ cup granulated sugar
  • 8-10 fresh raspberries
 

Step 1: Blend the Base Ingredients

Add 1 ½ cups of full-fat cottage cheese, ½ cup of plain Greek yogurt, and ¼ cup of sugar to a blender or food processor.

Blend the mixture until smooth, which should take about one minute.

Note that the texture may still have small bits of cheese, which is perfectly fine.

 

Step 2: Incorporate the Raspberries

Add 4-5 fresh raspberries to the blender and blend again to create a pink swirl throughout the mixture.

Then, use a spoon to roughly mash the remaining 4-5 raspberries and stir them into the mixture to add texture and bursts of raspberry flavor.

 

Step 3: Fill and Prepare Popsicle Molds

Carefully fill your popsicle molds with the mixture.

Once filled, tap the molds against the countertop about twenty times to release any air bubbles trapped within the mixture.

This helps to ensure the popsicles freeze solidly and without large air pockets.

 

Step 4: Freeze the Popsicles

Place the filled popsicle molds into the freezer and allow them to freeze for at least four hours or overnight until they are completely solid.

Once frozen, remove the popsicles from their molds and enjoy a creamy, high-protein treat!
