Easy Cottage Cheese Sourdough Pancakes

Ingredients

  • 1 lb cottage cheese (or farmer’s cheese)
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup avocado oil
  • 1/2 cup sourdough starter
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • Raisins (optional)
  • Coconut oil (for cooking)
  • Flour (for dusting)
 

Step 1: Gather and Prepare Ingredients

Collect all the ingredients: 1 lb cottage cheese, 2 eggs, ½ cup sugar, a little bit of vanilla, 1 ¼ cup oil (recommended avocado oil), ½ cup sourdough starter, and a pinch of salt.

Optionally, prepare some raisins if you wish to add extra flavor to the pancakes.

 

Step 2: Mix the Batter

In a large mixing bowl, combine the cottage cheese, eggs, sugar, vanilla, oil, sourdough starter, and salt.

Use either a hand mixer or a KitchenAid mixer to mix everything together until well combined.

Add 1 tablespoon of baking powder and stir until it’s fully incorporated.

If you are using raisins, gently fold them into the batter at this stage.

 

Step 3: Form the Pancakes

Prepare to cook by heating a little coconut oil in a skillet over medium heat.
