Easy Cottage Cheese Tuna Casserole

Ingredients

  • 1/2 diced white onion
  • 2 minced garlic cloves
  • 2 tablespoons cooking oil (extra virgin olive oil or avocado oil)
  • 8 ounces sliced mushrooms
  • 8 ounces pasta shells (about half a box)
  • 1 (5 oz) can drained tuna (solid white albacore, packed in water)
  • 1 cup small curd cottage cheese (low fat)
  • 3/4 to 1 cup shredded pepper jack cheese
  • 1/2 cup plain breadcrumbs
  • Chives for optional garnish
 

Step 1: Preheat Oven and Prepare Casserole Dish

Start by preheating your oven to 350°F (175°C).

While the oven is heating up, set aside a casserole dish that you will use later for baking the mixture.

 

Step 2: Sauté Garlic, Onion, and Mushrooms

In a saucepan, heat some cooking oil over medium heat.

Add minced garlic and diced onion to the saucepan and sauté them until the onion becomes translucent.

Once the onion is translucent, add the sliced mushrooms and continue cooking until they are fully cooked and softened.

 

Step 3: Cook and Drain the Pasta

While the mushroom mixture is cooking, prepare your pasta according to the package directions.

Once the pasta is cooked to al dente, drain it well and set it aside.

 

Step 4: Combine Ingredients

In a large bowl, combine the cooked and drained pasta with the mushroom mixture, canned tuna, and cottage cheese.

Mix well until all the ingredients are evenly incorporated.

 

Step 5: Assemble and Bake the Casserole

Pour the pasta mixture into the prepared casserole dish.

Evenly top the mixture with shredded pepper jack cheese and a sprinkle of breadcrumbs.

Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese is brown and bubbly.

Once the casserole has baked to perfection, remove it from the oven and let it cool for a few minutes before serving.
