Easy Cottage Cheese Yogurt Pancakes

Ingredients

  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 3/4 cup low-fat cottage cheese
  • 1/2 cup plain low-fat yogurt
  • 3/4 cup skimmed milk
  • 1 tablespoon cooking oil
 

Step 1: Combine Dry Ingredients

In a large bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of baking soda.

Mix these dry ingredients thoroughly to ensure they are evenly distributed.

 

Step 2: Prepare Wet Ingredients

In a separate medium bowl, whisk together 2 eggs, 3/4 cup of low-fat cottage cheese, 1/2 cup of plain low-fat yogurt, 3/4 cup of skim milk, and 1 tablespoon of vegetable oil.

Continue whisking until the mixture is smooth and well blended.

 

Step 3: Combine Wet and Dry Mixtures

Pour the wet mixture into the bowl with the dry ingredients.

Stir until the two mixtures are well combined, creating a consistent batter without any lumps.

Be careful not to overmix.

 

Step 4: Preheat Cooking Surface

Preheat a non-stick griddle or skillet over medium heat.
