Total Time | 25-35 minutes |
Level of Difficulty | Easy |
Ingredients
- 1 medium zucchini
- 1 bunch of parsley
- 200 g cottage cheese
- 2 eggs
- 80 g flour
- 2 cloves of garlic
- Salt
- Black pepper
- Vegetable oil for frying
Step 1: Prepare the Ingredients
Start by grating 1 medium zucchini using the large holes of a grater.
Chop a bunch of parsley into fine pieces.
Place the grated zucchini and chopped parsley into a bowl.
Mince 2 cloves of garlic and set them aside for later use.
Step 2: Mix the Batter
In the bowl with the grated zucchini and chopped parsley, add 200g cottage cheese, 2 eggs, and 80g plain flour.
Season the mixture with salt and black pepper to taste.
Add the minced garlic to the bowl.
Mix everything together until well combined and a thick batter forms.
Step 3: Form and Fry the Patties
Heat vegetable oil in a frying pan over medium heat.
Using a tablespoon, scoop portions of the mixture and form them into patties, then place them in the frying pan.
Fry the patties on each side until they are crispy and golden brown, which should take about 3-4 minutes per side.
Step 4: Serve and Enjoy
Once the fritters are cooked to a golden brown, remove them from the frying pan and place them on a plate lined with paper towels to absorb any excess oil.
Serve the zucchini and cottage cheese fritters with a side of Greek yogurt.
Enjoy your delicious and healthy appetizer!
