Easy Cracked Out Hashbrown Breakfast Casserole

Ingredients

  • 2 pounds bacon
  • 1 bag frozen shredded hash browns (30 to 32 oz), thawed
  • 1 package ranch dressing mix (1 oz)
  • 2 cups cheddar cheese, shredded
  • 8 large eggs
  • 2 cups milk

Step 1: Prepare the Oven and Pan

Preheat your oven to 350ºF.

Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.

Set the baking dish aside for later use.

Step 2: Cook the Bacon

In a large skillet, cook the bacon over medium heat until it becomes crispy.

Remove the bacon from the skillet and place it on a paper towel-lined plate to absorb excess grease.

Once the bacon is cool enough to handle, chop it into small pieces.

Leave most of the bacon drippings in the skillet.

Step 3: Cook the Hash Browns

Add the hash browns to the skillet with the bacon drippings.

Cook the hash browns over medium heat until they are lightly browned, stirring occasionally to ensure even cooking.

Once done, transfer the browned hash browns to the prepared 9×13-inch baking dish, spreading them evenly.

Step 4: Assemble the Casserole

Top the hash browns in the baking dish with the chopped bacon and an even layer of cheese.

In a separate bowl, whisk together the eggs, ranch dressing mix, and milk until well combined.

Pour this egg mixture evenly over the hash brown, bacon, and cheese layers in the baking dish.

Step 5: Bake the Casserole

You can cover and refrigerate the assembled dish at this point if you plan to bake it later.

When ready to bake, do so uncovered in the preheated oven at 350ºF for 60 to 70 minutes, or until the casserole is set and the top is golden brown.
