Cooking Time 30-40 minutes
Total Time 40-60 minutes
Level of Difficulty Easy

Ingredients

  • 2 cans whole peeled tomatoes
  • 1 yellow onion
  • 6 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • 3 cups vegetable stock
  • Salt
  • Black pepper
  • Fresh basil
  • Dried thyme
  • Oregano
  • Cream

Step 1: Gather and Prepare Ingredients

Start by gathering the following ingredients: two cans of whole peeled tomatoes, one yellow onion, six cloves of garlic, two tablespoons of butter, three tablespoons of olive oil, one tablespoon of sugar, three cups of vegetable stock (or water), cream, salt, pepper, fresh basil, and any other herbs you like.

Chop the yellow onion into small pieces and smash and mince the six cloves of garlic.

Step 2: Cook the Onion and Garlic

In a large pot or Dutch oven, melt two tablespoons of butter and three tablespoons of olive oil over medium heat.

Once the butter has melted, add the chopped onion and stir.

Cook until the onion becomes translucent and softened, which should take about eight minutes.

Next, add the minced garlic and stir constantly for about five minutes, ensuring it does not burn.

Step 3: Add Tomatoes and Liquid

Open the two cans of tomatoes and add them to the pot, including all the juice.

Pour in three cups of vegetable stock (or water).

Add one tablespoon of sugar, a generous pinch of salt, and at least 1/4 teaspoon of black pepper.

Stir everything to combine well.

Step 4: Simmer the Soup

Bring the mixture to a boil, then reduce the heat to a simmer.

Let it cook for about 30 minutes to let the flavors meld together.

During the last few minutes of simmering, add a pinch of dried thyme and oregano or any other herbs you prefer to enhance the flavor.

Step 5: Blend and Season

After 30 minutes of simmering, use an immersion blender to blend the soup until it reaches a silky texture.

Be careful not to overblend.

Stir in a splash of cream to add richness and balance the acidity of the tomatoes.

Taste the soup and adjust the seasoning with more salt and pepper if needed.

Step 6: Serve and Garnish

Serve the soup in bowls, optionally topped with homemade croutons or a slice of crusty bread.

Garnish with torn fresh basil for a burst of color and flavor.

Enjoy your warm, comforting tomato soup!
