Ingredients
- 4 ounces goat cheese
- 1/4 cup finely chopped pepperoncini
- 1 1/2 teaspoons finely chopped fresh thyme leaves
- Salt and black pepper (to taste)
- 4 bone-in, skin-on chicken breasts (about 2 pounds)
Step 1: Preheat and Prepare Equipment
Preheat your oven to 425°F (220°C).
Place a cast iron skillet or heavy-duty oven-safe skillet over medium-high heat on the stovetop.
Allow the skillet to heat up while you prepare the chicken and filling.
Step 2: Prepare the Goat Cheese Filling
In a small bowl, mash the goat cheese with a fork until it is smooth.
Stir in the chopped pepperoncini and fresh thyme.
Season the mixture with salt and pepper to taste.
Set the filling aside as you prepare the chicken breasts.
Step 3: Create and Stuff Chicken Pockets
Using a paring knife, cut a slit along the thick side of each chicken breast to create a pocket.
