Ingredients
- 2 cups greek yogurt, strained (500g)
- 1/3 cup peanut butter (85g)
- 1/4 cup honey (60ml)
- 2 tsp vanilla extract
- 2/3 cup coconut milk (160ml)
- 2 oz dark chocolate, chopped (50g)
Step 1: Strain the Greek Yogurt
Start by straining 2 cups of unsweetened plain Greek yogurt overnight to remove excess moisture.
This will ensure your ice cream has a rich and creamy texture.
Step 2: Combine the Ingredients
In a large mixing bowl, combine the strained Greek yogurt, 1/3 cup of natural peanut butter, 1/4 cup of honey, 2 teaspoons of vanilla extract, and 2/3 cup of coconut milk.
Use a mixer to blend these ingredients together until the mixture is smooth and well combined.
Step 3: Add Optional Mix-Ins
If you want to add some extra flavor and texture, fold in 2 oz (50g) of finely chopped dark chocolate to the mixture.
This step is optional but highly recommended for chocolate lovers!
Step 4: Initial Freezing
Cover the bowl with plastic wrap or a lid and place it in the freezer for 45 minutes.
This will start the freezing process.
Step 5: Stir the Mixture
After 45 minutes, remove the bowl from the freezer and stir the mixture with a rubber spatula, mixing the frozen edges into the still-soft center.
This helps incorporate air and prevents large ice crystals from forming.
Step 6: Repeat Freezing and Stirring
Repeat the stirring process every 30-45 minutes until the ice cream reaches your desired consistency.
This may take several rounds, but your persistence will pay off with a creamy texture.
Step 7: Serve or Store
Once the ice cream has reached the right consistency, you can serve it immediately for a soft and creamy treat.
If you prefer a firmer texture, let the ice cream freeze solid for later.
If frozen solid, remove it from the freezer 15-20 minutes before serving to allow it to soften slightly, making it easier to scoop.
