Ingredients
- 2 cups fresh baby spinach
- Kosher salt
- 2 cups plain greek yogurt
- 3/4 cup finely chopped walnuts
- 1 garlic clove, minced (adjust to taste)
- 1 tablespoon fresh lemon juice (add more if desired)
- 1/2 cup chopped parsley
- 1 teaspoon dried mint
- Ground black pepper
- Extra virgin olive oil
- Vegetables
- Homemade pita chips
Step 1: Blanch the Spinach
Bring a pot of salted water to a boil.
Meanwhile, prepare a bowl of iced water and keep it nearby.
Add the spinach to the boiling water and cook for about 10 seconds.
Using a pair of tongs, transfer the spinach to the iced water immediately to stop the cooking process.
Allow it to cool for a couple of minutes, then drain the spinach well and wring out any excess water.
Step 2: Prepare the Spinach Mixture
In a mixing bowl, combine the blanched spinach with yogurt, walnuts, garlic, lemon juice, parsley, and mint.
Season with a good dash of kosher salt and black pepper.
Add a generous drizzle of extra virgin olive oil, about 2 tablespoons, and mix everything together thoroughly.
Taste the mixture and adjust the seasoning as necessary.
Step 3: Serve and Enjoy
Transfer the spinach mixture to a serving dish.
Serve it alongside your favorite fresh veggies and homemade pita chips.
