Level of Difficulty | Easy |
Ingredients
- 1/2 english cucumber
- 2 cups plain greek yogurt
- 1/3 cup chopped dill
- 3-4 grated garlic cloves
- 1 1/2 tablespoons fresh lemon juice
- 3 tablespoons extra virgin olive oil
- Salt
- Pepper
Step 1: Prepare the Cucumber
Start by peeling half of an English cucumber.
Once peeled, finely dice the cucumber or grate it using the large holes of a box grater.
Transfer the chopped cucumber to a bowl lined with cheesecloth or a fine mesh strainer.
Sprinkle half a teaspoon of salt over the cucumber, lightly stir to combine, and set aside to allow the cucumber to release its juices.
Step 2: Prepare the Yogurt Mixture
In a separate bowl, combine two cups of plain Greek yogurt, one third cup of chopped dill, three to four grated garlic cloves, and one and a half tablespoons of fresh lemon juice.
Mix these ingredients thoroughly to ensure an even distribution of flavors.
Step 3: Drain the Cucumber
After the cucumber has set with the salt for a few minutes, use the cheesecloth to squeeze out as much juice as possible from the chopped cucumber.
This helps to keep the Tzatziki sauce from becoming too watery.
Step 4: Combine and Season
Add the drained cucumber to the yogurt mixture.
Season the mixture to taste with salt and pepper.
Stir in three tablespoons of extra virgin olive oil, mixing until well incorporated.
Step 5: Refrigerate and Serve
Cover the bowl and refrigerate the Tzatziki sauce for at least one hour, allowing the flavors to meld together.
When ready to serve, give the sauce a good stir and enjoy it as a dip, sauce, or spread.
