Ingredients
For the dip:
- 3 tbsp dried parsley flakes
- 16 oz plain greek yogurt (full-fat for a creamier dip)
- 1/2 tsp salt
- 1/4 tsp black pepper (freshly ground for best flavor)
- 1 tbsp chopped green onion
- 1 tsp onion powder
- 1 tsp dried basil
- 1 tsp garlic powder
For the optional garnish:
- 1/2 tsp dried minced onion
- 1/2 tsp dried minced garlic
Step 1: Slice Green Pepper
Start by slicing a green pepper into manageable pieces that are easy to dip with.
Set the slices aside for later use.
Step 2: Prepare the Greek Yogurt Dip
In a medium-sized bowl, combine Greek yogurt, dried parsley, garlic powder, onion powder, pepper, salt, dried basil, and chopped green onions.
Mix all the ingredients together until well combined, creating a flavorful and creamy dip.
Step 3: Prepare the Veggie Platter
Cut an assortment of your favorite vegetables into shapes that are easy to dip with.
Suggested vegetables include cauliflower, cucumber, green bell pepper, broccoli, celery, yellow bell pepper, carrots, red bell pepper, radishes, and cherry tomatoes.
Step 4: Assemble the Platter
Lay a bed of kale on a serving platter and surround it with the prepared vegetable slices.
Place a bowl in the center of the platter and fill it with the Greek yogurt dip.
Step 5: Add Optional Garnishes and Serve
For extra flavor, optionally sprinkle the dip with some green onions, dried minced garlic, and dried minced onion.
