- 4 center-cut pork chops (1 inch thick)
For the marinade:
- 4 tbsp Dijon mustard
- 2 tbsp soy sauce
- 1 tsp salt
- 4 tbsp coarse Dijon mustard (adds texture and a sharper mustard flavor)
- 1/2 cup honey (I use Sue Bee honey for its consistent quality)
- 3 to 4 garlic cloves (finely minced for best flavor)
- 4 tbsp apple cider vinegar
- 1/2 to 1 tsp black pepper
Step 1: Prepare the Marinade
Begin by gathering your ingredients: 4 center-cut pork chops (1 inch thick), 2 tablespoons of soy sauce, 1 teaspoon of salt, 1/2 to 1 teaspoon of black pepper, 4 tablespoons of Dijon mustard, 4 tablespoons of coarse Dijon mustard, 4 tablespoons of apple cider vinegar, 3 to 4 minced garlic cloves, and 1/2 cup of honey.
In a bowl, combine the honey, minced garlic, salt, black pepper, soy sauce, apple cider vinegar, Dijon mustard, and coarse Dijon mustard.
Mix until all the ingredients are thoroughly combined.
Step 2: Marinate the Pork Chops
Reserve about 1/2 cup of the marinade for later use.
Pour the remaining marinade over the pork chops, ensuring they are all well-coated.
Cover the pork chops and place them in the refrigerator to marinate for 8 to 12 hours, allowing the flavors to penetrate the meat.
