Ingredients
- 2 cups white flour
- 4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons white sugar
- 1/4 cup melted unsalted butter
- 2 cups milk
- 1 egg
- 2 teaspoons vanilla extract
- 2 tablespoons melted unsalted butter (for greasing the baking dish)
- 2 cups fresh blueberries
- 1 teaspoon flour (for coating berries)
- 1 tablespoon powdered sugar (optional)
Step 1: Preheat Oven and Prepare Butter
Preheat your oven to 350℉.
While the oven is heating up, place 2 tablespoons of butter into a 9×13 casserole dish and put the dish in the oven to melt the butter.
The butter should melt in just a few minutes.
Be sure to keep an eye on it to prevent burning.
In the meantime, melt an additional 1/4 cup of butter in the microwave, making sure not to overheat it.
Let it cool slightly before using it in the batter.
Step 2: Prepare Dry Ingredients
In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, salt, and sugar.
Ensure that these dry ingredients are thoroughly combined.
Step 3: Combine Wet Ingredients
Make a well in the center of the flour mixture.
Add the melted butter, milk, egg, and vanilla to the well.
Using a whisk, mix everything together until the batter is smooth and free of clumps.
Step 4: Prepare Blueberries and Casserole Dish
While the butter is melting in the oven, lightly toss the blueberries with 1 teaspoon of flour, making sure all of the berries are well-coated.
This will help to keep them evenly distributed throughout the batter.
Once the butter in the casserole dish has melted, carefully remove it from the oven.
Use a brush to spread the melted butter all over the bottom and sides of the dish to prevent sticking.
Step 5: Assemble and Bake
Pour the pancake batter into the prepared casserole dish.
Evenly sprinkle the flour-coated blueberries over the top of the batter, making sure they are well distributed.
Place the casserole dish back into the preheated oven and bake for 30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Step 6: Serve and Enjoy
After baking, remove the casserole dish from the oven.
