Ingredients
For the crust:
- 5 tbsp melted butter
- 2 cups graham cracker crumbs (finely crushed for best texture)
For the filling:
- 1/8 cup granulated sugar
- 1 tsp ground cinnamon (for best flavor and aroma)
- 15 oz canned pumpkin puree (I use Libby’s pumpkin puree)
- 2 beaten eggs (ensure they are well beaten and smooth)
- 1 packet unflavored gelatin
- 1/2 tsp ground nutmeg
- 1 cup heavy cream
- 1/2 tsp salt
For serving:
- whipped cream (optional, for garnish)
Step 1: Prepare the Graham Cracker Crust
Place the graham crackers into a large ziplock bag.
Using a rolling pin, crush the graham crackers into small pieces until they resemble sand.
Pour the graham cracker crumbs into a medium-sized bowl.
Add the melted butter to the graham cracker crumbles and mix until well combined.
Set the mixture aside.
Step 2: Make the Pumpkin Pie Filling
In a heavy saucepan, combine the gelatin, cinnamon, ginger, nutmeg, and salt.
Add the heavy cream, sugar, and eggs, mixing well to combine.
Heat over low heat, stirring continuously, until the gelatin dissolves and the pie mixture thickens (about 10 minutes).
Once thickened, remove from heat and stir the pumpkin puree into the gelatin mixture.
Step 3: Assemble the Pumpkin Pie Cups
Start by adding the graham cracker crust mixture to the bottom of each cup.
Gently press down to create a firm base layer.
Next, top the crust with the pumpkin pie filling.
Cover each cup with foil and place them in the refrigerator to chill for at least 2 hours, allowing the pie filling to set.
