Ingredients

For the crust:

  • 2 chilled pie crusts (store-bought for convenience)
  • flour (for dusting the work surface)

For the filling:

  • 1/3 cup brown sugar
  • 3/4 cup pumpkin puree (I use Libby’s pumpkin puree)
  • a pinch of salt
  • 1 tsp pumpkin pie spice (freshly ground for best flavor)

For the egg wash:

  • 2 tsp milk
  • 1 egg

For the glaze:

  • 1 tsp vanilla extract (I prefer McCormick’s pure vanilla extract)
  • 1 tbsp milk
  • 1 cup confectioners’ sugar

Step 1: Prepare the Baking Sheets and Pumpkin Mixture

Preheat your oven to 350°F and line two large baking sheets with parchment paper.

Step 2: Roll Out and Cut the Pie Crust
