Today, I’m sharing a fun and delicious recipe: pumpkin pie pop tarts.
Yep, you heard that right! These little treats are perfect for fall, or anytime you crave something sweet and cozy.

Ingredients
For the crust:
- 2 chilled pie crusts (store-bought for convenience)
- flour (for dusting the work surface)
For the filling:
- 1/3 cup brown sugar
- 3/4 cup pumpkin puree (I use Libby’s pumpkin puree)
- a pinch of salt
- 1 tsp pumpkin pie spice (freshly ground for best flavor)
For the egg wash:
- 2 tsp milk
- 1 egg
For the glaze:
- 1 tsp vanilla extract (I prefer McCormick’s pure vanilla extract)
- 1 tbsp milk
- 1 cup confectioners’ sugar
For the topping:
- orange decorative sugar (optional, for festive look)
- 1/2 cup cinnamon sugar
Step 1: Prepare the Baking Sheets and Pumpkin Mixture
Preheat your oven to 350°F and line two large baking sheets with parchment paper.
In a medium bowl, whisk together pumpkin, brown sugar, pumpkin pie spice, and salt until the mixture is smooth and well-combined.
Step 2: Roll Out and Cut the Pie Crust
On a lightly floured surface, roll out the pie crust into a large rectangle until it’s about ⅛” thick.
Cut the dough in half crosswise, then into quarters lengthwise, creating smaller rectangles.
Transfer these pieces to a baking sheet and refrigerate them while you repeat the process with any remaining dough.
Step 3: Assemble the Pop Tarts
Take out the refrigerated dough rectangles.
Spoon a large dollop of the pumpkin mixture into the center of half of the dough rectangles.
Place another piece of pie crust on top of each filled rectangle, then press around the edges to seal.
Use a fork to crimp the edges.
With a toothpick, gently poke small holes in the tops of each pastry to allow steam to escape.
Brush each pop tart with egg wash to promote browning during baking.
Step 4: Bake the Pop Tarts
Place the assembled pop tarts on the lined baking sheets and bake in the preheated oven until they are golden brown, about 20 minutes.
Let the pop tarts cool for about 10 minutes on the pan before transferring them to a wire rack to cool completely.
Step 5: Make and Apply the Glaze
To make the glaze, whisk together powdered sugar, milk, and vanilla in a small bowl until smooth.
Once the pop tarts are completely cooled, spoon the glaze over them.
For an added touch, sprinkle with cinnamon sugar and sanding sugar.
Allow the glaze to set before serving.
