Preparation Time | 10-15 minutes |

Total Time | 40-60 minutes |
Level of Difficulty | Easy |
Ingredients
- 1 can (15 ounces) pumpkin puree (or just under 2 cups homemade pumpkin puree)
- 1 1/4 cups greek yogurt
- 3-4 tablespoons mascarpone cheese
- 1 tablespoon vanilla essence
- 2 1/2 tablespoons brown sugar
- 1 1/2 to 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons honey or molasses (plus extra for garnish)
- Chocolate chips for garnish
- Chopped hazelnuts or walnuts for garnish
Step 1: Mix the Ingredients
Place the pumpkin puree, Greek yogurt, and the remaining ingredients (except the chocolate chips and nuts) in a large mixing bowl.
Using a hand electric mixer or a whisk, mix everything together until you achieve a smooth consistency.
Taste the mixture and adjust the flavor as desired, adding a bit of molasses or brown sugar for more sweetness, or adjusting the spices to intensify the cinnamon or nutmeg.
Mix again to ensure everything is well combined.
Step 2: Chill the Mixture
Transfer the pumpkin-yogurt mixture into small (3-ounce) serving goblets or small mason jars.
Cover each serving container and refrigerate for at least 30 minutes, or leave them overnight to allow the flavors to meld and the mixture to set.
Step 3: Add Toppings and Serve
When you are ready to serve, take the chilled pumpkin-yogurt mixtures out of the refrigerator.
Top each one with a drizzle of molasses, a sprinkle of chocolate chips, and some chopped hazelnuts or walnuts.
Enjoy your delicious dessert!
