Ingredients
- 1 small onion
- 3 cups shredded cheddar cheese
- 1/2 cup melted butter
- 2 cups sour cream
- 1 (10.5 ounce) can cream of chicken soup
- 1 teaspoon kosher sea salt
- 1 teaspoon freshly cracked black pepper
- 2 cups frozen hash browns
- Garlic powder (optional)
Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C).
While the oven is heating, finely chop a small onion (or half of a large onion) and grate three cups of cheddar cheese.
Set aside two cups of the grated cheese for later use.
Step 2: Prepare the Casserole Dish
Pour half a cup of melted butter into a casserole dish.
Swirl it around to ensure the dish is well coated with butter.
This will help prevent the casserole from sticking and add flavor.
Step 3: Mix the Creamy Base
In a large bowl, combine two cups of sour cream and a 10.5-ounce can of cream of chicken soup.
Add the chopped onion, one teaspoon of kosher salt, and one teaspoon of freshly cracked black pepper.
Stir in two cups of the grated cheddar cheese (reserving the remaining cheese for later).
Mix everything together until well combined.
Step 4: Add Hash Browns and Season
Fold in the frozen hash browns into the creamy mixture until they are well coated.
Optionally, you can add garlic powder to taste for an extra flavor kick.
Step 5: Assemble and Bake
Spoon the mixture into the prepared casserole dish, spreading it out into an even layer.
Sprinkle the remaining cup of grated cheddar cheese on top.
Place the casserole in the preheated oven and bake for 45 to 50 minutes, or until the casserole is golden and bubbly.
Step 6: Cool and Serve
Once the casserole is done baking, allow it to cool for at least 15 minutes before serving.
This will help it set and make it easier to serve.
