Ingredients
- 1 can (15 oz) pumpkin puree
- 1 can (14 oz) sweetened condensed milk
- 2 large eggs
- 2 teaspoons pumpkin pie spice mix
- 1/2 teaspoon salt
- 1 unbaked pie crust (optional)
- Whipped cream for topping (optional)
Step 1: Preheat the Water Bath
Using an immersion circulator, preheat a water bath to 185 degrees F.
This will ensure that the water is at the correct temperature for cooking your pie filling in jars.
Step 2: Prepare and Fill the Jars
In a bowl, whisk together all of your ingredients, except for the pie crust and whipped cream, until well combined.
Pour the mixture evenly between 5 quarter pint jars.
Make sure the lids are screwed on until just fingertip tight to allow air to escape during cooking.
Step 3: Cook the Filling
Carefully drop the jars into the preheated water bath.
Cook for one hour, ensuring the jars remain submerged in the water.
This sous vide method will cook the pie filling evenly and thoroughly.
Step 4: Cool the Jars
After an hour, remove the jars from the water bath and let them come to room temperature on the counter.
Once they have cooled, place the jars in the fridge for at least 2 hours to set the filling.
Step 5: Prepare the Pie Crust
Before serving, unroll the pie crust onto a piece of parchment paper on a baking sheet.
Bake according to the package instructions until the crust is just golden brown.
