Ingredients
- 1 tablespoon salted butter
- 1/4 cup minced onions
- 1 clove garlic, finely chopped
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon dried basil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon chili powder
- 1 (14-ounce) can chopped tomatoes
- 1/2 cup reduced-sodium chicken broth
- 1 teaspoon honey
- 2 tablespoons heavy cream
- Optional: shredded parmesan cheese
Step 1: Sauté the Onions and Spices
Melt the butter in a 2-quart pot over medium heat.
Once the butter has melted, add the onions and cook, stirring frequently until the onions are soft and translucent, about 1 minute.
Next, add the garlic, smoked paprika, dried basil, salt, and chili powder.
Continue to cook, stirring frequently, for an additional 1 minute to release the flavors of the spices.
Step 2: Simmer the Soup
Add the tomatoes and broth to the pot.
Bring the mixture to a boil, then reduce the heat to low and let it simmer, stirring occasionally, for 20 minutes.
This allows the flavors to meld together and the soup to thicken slightly.
Step 3: Blend the Soup
After the soup has simmered, add honey and give it a good stir.
Pour the soup into a stand blender or use an immersion blender directly in the pot to puree the soup to your desired consistency.
Be careful with hot liquids and blend in batches if necessary.
Step 4: Add Cream and Serve
Return the pureed soup to the pot and stir in the cream.
Heat the soup gently over low heat until it’s warmed through.
Pour the soup into bowls and top with shredded or grated Parmesan cheese if desired.
