Ingredients

  • 3 lbs fresh tomatoes (quartered, or halved if small)
  • 1 yellow onion (peeled and quartered)
  • 6 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons salt (divided)
  • 1 teaspoon italian herbs
  • 1/2 teaspoon black pepper
  • 2 cups beef broth (or chicken or vegetable)
  • 1/4 cup loosely packed fresh basil leaves
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon sugar
  • Optional for serving: heavy cream and grilled cheese sandwiches

Step 1: Prepare and Roast the Vegetables

Preheat your oven to 400°F.

On a large baking sheet, add tomatoes, onion, and garlic.

Drizzle with olive oil and then add 1 teaspoon of salt, Italian seasoning, and pepper.

Stir well to ensure the vegetables are properly coated with oil and seasoning.

Roast in the oven for 20 minutes.

After the initial roasting time, use a spatula to stir and flip the vegetables.

Return them to the oven for another 20 minutes.

Step 2: Blend the Soup
