Ingredients
- 2 tablespoons olive oil
- 1 small onion, chopped
- 4-5 garlic cloves, minced
- 3 celery stalks, sliced
- 4 tomatoes, chopped
- 2 cups water (or vegetable broth)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 teaspoon dried thyme (optional)
Step 1: Sauté the Vegetables
Heat olive oil in a pot over medium heat.
Add chopped onion, celery, and garlic to the pot.
Sauté for about 5 minutes, until the onions become soft and translucent.
Step 2: Add Tomatoes and Cook
Add chopped tomatoes and salt to the pot.
Continue to sauté for another 5-8 minutes until the tomatoes start to soften and release their juices.
Step 3: Cook the Soup
Add water or vegetable stock to the pot and bring the mixture to a boil.
If using a pressure cooker, cook for 2 whistles.
Alternatively, you can cook the soup partially covered over medium heat for 15-20 minutes until all the vegetables are tender.
Step 4: Blend and Season
Using a hand mixer or a food processor, blend the cooked mixture until it becomes a smooth puree.
Add black pepper and adjust for salt as needed to taste.
Step 5: Serve and Garnish
Empty the pureed soup into deep individual serving bowls.
Garnish each bowl with a drizzle of olive oil and a sprinkle of dried thyme if desired.
