Ingredients

  • 2 cups self-rising flour (250g)
  • 1 cup plus 2 tablespoons small curd cottage cheese (266g)
  • 1 large egg, beaten (for egg wash, optional)
  • 3 tablespoons everything bagel seasoning (optional)

Step 1: Preheat the Oven and Prepare the Baking Sheet

Preheat your oven to 375°F (191°C).

Line a large baking sheet with parchment paper to prevent the bagels from sticking during baking.

This will also make cleanup a breeze.

Step 2: Prepare the Dough

In a large mixing bowl, combine 2 cups of self-rising flour and 1 cup of cottage cheese.

Use a spatula to mix these ingredients until the flour is mostly incorporated with the cottage cheese.

The mixture will start to form a soft dough.

Step 3: Knead the Dough

Once the dough starts coming together, use your hands to knead the remaining flour into the dough.

If the dough seems dry, add the remaining 2 tablespoons of cottage cheese.

The texture of the dough should be tacky but not overly sticky.

Aim for a consistency that holds together well.

Step 4: Shape the Bagels

Divide the dough into six equal balls for even-sized bagels.

On a lightly floured surface, take one dough ball and roll it out into a rope about 3/4 inch thick.

Form a circle with the rope and pinch the ends together to seal.

Repeat this process with the remaining dough balls.

Step 5: Prepare Bagels for Baking

Place the shaped bagels onto the prepared baking sheet, making sure to space them at least 1.5 inches apart to allow for expansion during baking.

If you prefer, brush the tops of the bagels generously with an egg wash and sprinkle them with your favorite bagel seasoning for added flavor and a golden crust.

Step 6: Bake and Cool the Bagels

Bake the bagels in the preheated oven for about 25 minutes, or until they are golden brown and cooked through.

Once done, remove the baking sheet from the oven and allow the bagels to cool completely before eating.

Enjoy your homemade cottage cheese bagels!
