Ingredients
- 1 1/4 cups old fashioned oats (other options: steel cut or quick oats)
- 1/2 cup flaxseeds (optional)
- 3/4 cup molasses
- 1/2 cup any type of flour
- 2 teaspoons cornstarch
- 1 package peppermint candies
- Canola or vegetable oil (for greasing tins)
Step 1: Preheat and Prepare Ingredients
Start by preheating your oven to 350°F (175°C).
While the oven is heating, prepare your ingredients.
In a large bowl, mix together the oats, molasses, and flaxseed (if using) until the molasses is evenly distributed throughout the mixture.
Step 2: Combine Dry Ingredients
Gradually stir in the flour and cornstarch into the molasses mix.
It’s best to mix well after each addition to ensure an even consistency.
Using your hands might be the most effective way to thoroughly combine the ingredients into a cohesive batter.
Step 3: Prepare the Baking Tools
Heavily grease your mini muffin tins or cookie sheets to prevent sticking.

If using a mini muffin tin, fill each cup about 3/4 full with the batter.
