- 2 pcs bell pepper
- 1 tbsp tomato paste
- 1.5 cups chopped tomatoes

Step 1: Prepare and Fry the Eggplants
Gather your ingredients: 3 chicken fillets, 2 eggplants, 1 onion, 1 carrot, 2 bell peppers, 1 tablespoon of tomato paste, 1.5 cups of chopped tomatoes, vegetable oil for frying, salt, black pepper, red pepper flakes, and parsley.
Cut the eggplants into slices.
Heat vegetable oil in a pan over medium heat, then add the sliced eggplants.
Fry for about 5-7 minutes until they are golden brown, then remove and set aside.
Step 2: Sauté the Vegetables
In the same pan, add chopped onion and fry for about 1 minute until translucent.
Add grated or chopped carrot and fry for another minute.
Next, add chopped bell peppers and fry for about 2 minutes until the vegetables are slightly softened.
Step 3: Cook the Chicken
Add the chicken fillets to the pan with the vegetables, cooking until they are browned on both sides.
This may take a few minutes per side, depending on the thickness of the fillets.
Step 4: Build the Sauce
Stir in 1 tablespoon of tomato paste and mix well with the chicken and vegetables.
Add 1.5 cups of chopped tomatoes.
Season with salt, black pepper, and red pepper flakes to taste.
Cover the pan and let it simmer for about 15 minutes, allowing the flavors to meld.
Step 5: Final Cooking and Serving
After the initial 15-minute simmer, add the fried eggplants back into the pan.
Simmer for an additional 5 minutes.
Garnish the dish with chopped parsley before serving.
Serve hot and enjoy your meal!
