Ingredients
- 12 oz chicken
- 2 cups cottage cheese
- 2 tbsp mayonnaise
- 1/2 cup chopped onion
- 1 cup chopped Celery
- 1 tbsp Dijon mustard
- 1/4 tsp black pepper
- 1/4 cup chopped nuts (walnuts)
- 2 tbsp dried cranberries
- 1 chopped up Apple
- 1/2 cup sliced grapes
Step 1: Prepare the Chicken
Start by preparing 12 oz of chicken.
You can use pre-cooked chicken like a rotisserie or canned chicken.
If using canned chicken, drain the liquid before proceeding.
Step 2: Shred the Chicken
Shred or break up the chicken with your hands into small pieces.
This will help it mix well with the other ingredients.
Step 3: Mix the Base Ingredients
In a large bowl, add 2 cups of cottage cheese.
If you don’t like the texture, you can whip it in a blender or food processor before adding it to the bowl.
Then, add 2 tbsp of mayonnaise, 1/2 cup of chopped onion, 1 cup of chopped celery, 1 tbsp of Dijon mustard, and 1/4 tsp of black pepper.
Mix all these ingredients until well combined.
Step 4: Add Optional Ingredients (Optional)
If desired, add some optional ingredients to enhance the texture, flavor, and macros of the chicken salad.
These include 1/4 cup of chopped nuts (e.g., walnuts), 2 tbsp of dried cranberries, 1 chopped apple, and 1/2 cup of sliced grapes.
Mix everything until fully incorporated.
Step 5: Combine the Chicken and Mix
Add the shredded chicken to the bowl and mix until well combined with the other ingredients.
Step 6: Serve and Enjoy
Serve the chicken salad by itself, with crackers, over greens, with rice, or in a sandwich.
You can also store it in the refrigerator for later use.
