Ingredients
- 2 tbsp olive oil
- 1 tsp black pepper (freshly ground for best flavor)
- 1 tbsp garlic
- 2 cups cottage cheese (full-fat for ultimate creaminess)
Step 1: Gather and Prepare Ingredients
Start by gathering all the necessary ingredients.
You’ll need 2 cups of high-fat cottage cheese, 1 tablespoon of garlic (adjust to taste), 1 teaspoon of black pepper, 2 tablespoons of olive oil, and, optionally, 1 quart of heavy cream (reduced and cooled to about ½ cup if using).
Step 2: Combine Ingredients in Food Processor
Place the cottage cheese, garlic, black pepper, and olive oil into a food processor.
If you’re using the reduced heavy cream, add about ½ cup to the food processor as well.
Step 3: Blend the Sauce
Blend the mixture in the food processor until it reaches a smooth and creamy consistency.
This may take a few minutes, so be patient to ensure all the ingredients are well incorporated.
Step 4: Adjust Seasoning
After blending, taste the sauce and adjust the seasoning as needed.
Keep in mind that depending on the toppings you’ll be using, you may want to leave the sauce unseasoned for salt at this stage.
Step 5: Transfer and Serve
Once the sauce is blended to your desired consistency and taste, transfer it to a serving dish or container.
You can use it immediately on your white pizza or as a dip for chips or raw vegetables.
