Ingredients
For the sweet potatoes:

- 1/3 tsp ground cumin

For the turkey filling:
- 1 tbsp olive oil
- 2 garlic cloves, finely chopped (freshly minced for best flavor)
- 1 cup black beans, rinsed (optional, for added protein and fiber)
- 1 large handful fresh spinach, chopped
- 1 tsp ground cumin
- 1 cup frozen corn (optional)

For assembly and topping:

Step 1: Cook the Sweet Potatoes
Microwave Method: Start by piercing each sweet potato multiple times with a fork.
Cook one at a time in the microwave, for about 3 minutes on each side or until soft.
Cooking time may vary depending on your microwave.
Carefully remove from the microwave and let them cool.
Oven Method: Preheat your oven to 425ºF.
Place the sweet potatoes on a baking sheet lined with aluminum foil.
Prick them all over with a fork.
Bake in the oven until tender, 45 to 50 minutes.
Allow them to cool once done.
Step 2: Prepare the Sweet Potato Filling
Once the sweet potatoes are cool to the touch, slice them lengthwise and gently scoop out the potato flesh, being careful to keep the skins intact as you will need them later.
Transfer the potato flesh into a large bowl and gently mash it using a fork or potato masher.

Place the assembled sweet potatoes under the broiler in your oven for about 6 to 8 minutes, just until the cheese begins to brown and bubble.
