Dried egg noodles can be replaced with rice noodles, zucchini noodles, or shirataki noodles for gluten-free or low-carb options. Rice noodles offer a similar texture, while zucchini noodles add extra vegetables. Shirataki noodles are virtually calorie-free. Cooking times may vary, so follow package instructions for each noodle type.
Chicken broth can be substituted with vegetable broth for a vegetarian version, or bone broth for added nutrients and collagen. Use the same quantity as called for in the recipe. - 2 tablespoons cooking oil
- 1 large or 2 small medium-sized white or brown onions, peeled and sliced
- 80g fresh ginger, peeled and sliced
- 2 medium carrots, thickly sliced
- 2 whole celery stalks, sliced
- 8 cloves garlic, peeled and coarsely chopped
- 2 small chillies, sliced
- 1 teaspoon turmeric powder
- 1 whole chicken (approximately 1.2kg)
- 2 litres chicken broth
- 100g dried egg noodles
- 2 tablespoons chopped green onions or chives for garnish
- Salt as needed
- Pepper as desired
Step 1: Prepare Your Ingredients
Gather all your ingredients: 2 tablespoons of oil, 1 large or 2 small onions (peeled and sliced), 80g fresh ginger (peeled and sliced), 2 medium carrots (cut into thick rounds), 2 ribs of celery (sliced), 8 cloves of garlic (peeled and roughly chopped), 2 small chillies (sliced), 1 teaspoon of ground turmeric, 1 whole chicken (approximately 1.2kg), 2 litres of chicken stock, 100g dried egg noodles, 2 tablespoons of green onions or chives for garnish, and salt and pepper to taste.
Step 2: Sauté Aromatics in the Pressure Cooker
Set your pressure cooker to the sauté setting for 15 minutes.
Add the oil and sliced onion, sautéing for about 5-7 minutes until the onions are softened.
Next, add the ginger, carrots, celery, garlic, chillies, and turmeric.
Continue to sauté for an additional 5 minutes to build up the flavors.
Step 3: Cook the Chicken under Pressure
Place the whole chicken, breast side down, into the pressure cooker pot.
Pour the chicken stock over the chicken, ensuring it is as submerged as possible.
Secure the lid and set the cooker to high pressure.
Cook the chicken for 25 minutes.
Allow the pressure to release naturally for optimal flavor infusion.
Step 4: Option for Stovetop Method
If using a traditional stovetop method, place a large stock pot over medium heat.
Sauté the prepared ingredients as described in Step 2 in the stock pot, and then continue with the same process, ensuring the chicken and stock are well incorporated.
Bring to a boil, then reduce to a simmer.
Cover and cook for approximately 1.5 to 2 hours, until the chicken is cooked and tender.
Step 5: Cook the Noodles and Finalize the Dish
While the chicken is cooking, cook the dried egg noodles according to the package instructions.
Once the chicken is done, carefully remove it from the pot or pressure cooker and shred the meat, discarding the bones and skin.
Return the shredded chicken to the soup.
Add the cooked egg noodles, adjust the seasoning with salt and pepper, and stir to combine.
Step 6: Serve and Garnish
Ladle the hearty chicken soup into bowls.
Garnish each serving with the green onions or chives, and serve hot.
